Spotlight Recipe
Feta, Fire Roasted Tomatoes and Couscous Salad
This is my own concoction inspired by a premade salad I saw at the grocery store. It's just cooked couscous with chopped up feta and roasted tomatoes (I tried to make my own tomatoes but they're never as good as the ones from the store) I use the marinated oil from the tomatoes as a dressing.

Last week's goal: No going out to eat and work out four times.
I get an A+ in the no dining out department.
I get an F- for only working out two times last week. Blurg! I must have jinxed myself. At east I got my 5 miles running in though, even if just barely.
  
This week's goal: Continue to eat at home and organize the linen closet.
