After a week off from menu planning I am very glad to be getting back in to the groove. I felt a little lost in the kitchen when it came to make a meal.

Basil Pesto
My love for pesto can not be hidden. It is so easy and tasty. I have been making quite a bit lately from the basil growing in our garden.

I have been freezing it in ice cube trays to save up for when the winter takes away my basil.

I really like this recipe because of the use of walnuts instead of pine nuts. Nothing against pine nuts they just aren't as economical as walnuts. It also uses some spinach, which is always a plus.
