Black Bean and Yellow Rice Burritos
Baked Potato Buffet
Oh so refreshing on a hot summer day.
2 cups fresh pineapple or a can
1/2 orange pepper
1/2 red onion
bunch of cilantro
juice of a lime
salt and pepper
If you are feeling frisky you can chop all this stuff up and combine the ingredients. I was not. So if you are short on time or lazy like me, just throw it all in a food processor and pulse a few times. It still tastes amazing!
